Vegetarian Chickpea Curry Recipe

– 2 cans chickpeas (drained and rinsed) – 1 onion (finely chopped) – 2 tomatoes (chopped) – 1 cup coconut milk – 3 cloves garlic (minced) – 1 tablespoon curry powder – 1 teaspoon ground cumin – 1 teaspoon ground coriander – 1/2 teaspoon turmeric – Salt and pepper to taste – Fresh cilantro for garnish

Ingredients: 

In a large pan, sauté the chopped onion and minced garlic until translucent.

Add the chopped tomatoes, curry powder, cumin, coriander, turmeric, salt, and pepper.

Cook until the tomatoes are soft and the spices are fragrant.

Stir in the chickpeas and coconut milk. Simmer for 15-20 minutes, allowing the flavors to meld.

Garnish with fresh cilantro and serve over rice or with naan bread.
