Recipes For Keto Cauliflower Fried Rice

– 1 head of cauliflower, grated or processed into rice-sized piece – 2 tablespoons coconut oil – 1/2 cup diced onion – 1/2 cup diced bell pepper – 1/2 cup diced carrot – 2 cloves garlic, minced – 2 eggs, beaten – 2 tablespoons soy sauce or tamari

Ingredients:

Heat coconut oil in a large skillet or wok over medium heat.

Add diced onion, bell peppers, and carrots. Cook until vegetables are tender-crisp.

Add minced garlic and cook for an additional 1-2 minutes.

Push the vegetables to one side of the skillet and pour beaten eggs into the empty side.

Scramble the eggs until cooked through, then mix them with the vegetables. 

5.

 Add the cauliflower rice and soy sauce to the skillet. Stir well to combine.

6.

Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender. Garnish with green onions if desired.
