Eggplant Parmesan Recipe

– Eggplant, sliced into round – Marinara sauce – Mozzarella cheese, shredded – Parmesan cheese, grated – Bread crumb – Egg – Basil, chopped – Olive oil – Salt and pepper to taste

Ingredients: 

Preheat the oven to 375°F (190°C).

Dip eggplant slices in beaten eggs, then coat with breadcrumbs.

In a large skillet, heat olive oil over medium heat. Fry the eggplant slices until golden brown on both sides.
