Cherry Tomato And Mozzarella Pesto Pasta Recipe

– 1 lb (450g) pasta (penne or your choice) – 1 cup fresh basil leave – 1/2 cup grated Parmesan cheese – 1/3 cup pine nut – 2 cloves garlic – 1/2 cup extra-virgin olive oil – Salt and pepper to taste – 1 pint cherry tomatoes, halved – 1 cup fresh mozzarella balls, halved – Fresh basil leaves for garnish

Ingredients:

Cook pasta according to package instructions. Drain and set aside.

In a food processor, combine fresh basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.

With the food processor running, slowly drizzle in the olive oil until the pesto is well combined. Season with salt and pepper to taste.

Toss the cooked pasta with the pesto sauce. 

4.

Gently fold in cherry tomatoes and mozzarella balls. 

5.

Garnish with fresh basil leaves before serving.
